2 cups sugar
½ cup pureed cooked pumpkin
½ cup evaporated milk
¼ teaspoon pumpkin pie spice
¼ cup butter
½ teaspoon vanilla
1 cup chopped nuts
¼ teaspoon cornstarch

Directions:

  1. Combine sugar, pumpkin, milk, and spice in a medium saucepan. Bring to a boil over high heat, then reduce to a gentle simmer. Cook until it forms a soft ball when dropped in cold water, or until it reaches 236°F. Remove from heat
  2. Add the nuts, butter, and vanilla; beat until the mixture is creamy.
  3. Pour into a buttered plate and allow to cool. Cut into small chunks and serve.

Pumpkin Chili recipe
Chili can be made in endless ways, but the best chilies are rich, chunky, spicy, and just a tad sweet. This recipe is all those things, plus a little more.


Ingredients:
1 (15-ounce) can
1 cup chopped red bell pepper
1 teaspoon cumin

Directions:
Place all ingredients in a large saucepan, stir well to combine, and bring to a boil over high heat. Reduce to medium-low and simmer, covered, 35 minutes. Serve warm.

Pumpkin Waffles recipe

You may have had pumpkin pancakes before – it’s time to create your own pumpkin waffles. Top these with a dab of butter and enjoy a breakfast warm and sweet.


Ingredients:
1 medium egg
¾ cup pureed cooked pumpkin
¾ cup milk
½ cup flour
1 tablespoon butter, melted
1 teaspoon baking powder
½ teaspoon salt

Directions:
Beat the egg in a large bowl until light and fluffy. Add remaining ingredients and whisk until smooth and cohesive.

Bake the batter in a hot waffle iron.

Pumpkin Cake recipe

This pumpkin cake is light, moist, and perfectly sweet. The recipe calls for enough ingredients to make two loaves. Sure, you could halve the recipe to just make one cake, but trust us, you will want both.

Ingredients:
4 medium eggs
2 cups sugar
1 ½ cups pumpkin
1 cup (2 sticks) butter, softened
3 ½ cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
½ teaspoon salt
½ teaspoon powdered ginger
½ teaspoon cloves
1 ½ cups chocolate chips
1 ½ cups walnuts

Directions:

  1. Preheat oven to 375°F.
  2. In a large bowl, cream eggs, sugar, pumpkin, and butter.
  3. In another large bowl, sift together flour, baking soda, cinnamon, nutmeg, salt, ginger, and cloves. Add to egg mixture and stir until combined. Stir in chocolate chips and walnuts.
  4. Pour mixture into two greased 9-by-5-inch loaf pans. Bake 60 minutes, or until a toothpick inserted in the middle comes out clean. Remove from oven and cool slightly.
